If you love PB and bananas as much as I do, I think you’ll love my cookie recipe. I just can’t get enough of these things!
PB & Nanner Cookies
.5c Stevia or Splenda (or regular sugar if you don’t mind the extra calories)
.25c Splenda Brown Sugar Blend
1tsp baking powder
1tsp baking soda
2tbsp milled flaxseed
.5c peanut butter (I like to use the chunky kind for the texture)
1 large banana, mashed
2tbsp Egg Beaters
4tbsp almond milk (or regular milk)
Instructions:
Preheat oven to 350 degrees and coat a baking sheet with non-stick spray. Add all dry ingredients to a large bowl and whisk together. In a medium bowl, combine mashed banana, pb, egg, and milk. Mix well.
Batter will be very thick and sticky… if needed, add a bit of water to the mix.
Next, place 12 spoonfuls onto the baking sheet and shape as desired.
Licking the spoon!! LOL

April – Yay, glad you're excited to try them! If you like banana bread, you should like them… they kind of remind me a bit of that. Ugh, yeah… don't think onion and pepper would go too well in the cookies! Darn! You could always just use an egg white otherwise.

I'm so excited to try these! When I was at the grocery store I bought all the ingredients only to realize when I got home that I accidentally bought the "southwestern egg beaters" ugh!!! I don't think that pb banana onion and pepper cookies sound very appetizing! Blech! Lol
