Vegetarian Anniversary

I don’t know how it slipped by me, but yesterday (July 7th) was the one year anniversary of making my commitment to completely cut meat from my diet & go vegetarian (lacto-ovo).  

Don’t worry, I’m not preaching or trying to talk any of you into jumping on the vegetarian bandwagon.  I respect everyone’s choice to eat what they want or like and I realize that being a vegetarian isn’t right for everyone.  I respect what you eat, as long as you respect what I eat.  As you may know, my wonderful husband is by no means a vegetarian.  And I respect that, as he respects my choice to not eat meat.  

Some of you may be wondering why I’m vegetarian and choose not to eat meat.  Well, it’s actually for many reasons, which I’m not going to completely dissect here, but I’ll give you an overall gist of it.  I don’t eat meat for both health, environmental, & ethical reasons.  My mom has also been a vegetarian for almost as long as I can remember, so I kind of grew up in part of that mindset, just not sure why it took me so long.

Aww, poor Lisa.  I pretty much felt the same… hard to not think about what was on my plate & where it came from, even though I kept trying not to think about it.  Finally, I just couldn’t do it anymore.  

Like I said, I’m not trying to “preach”, or convert any of you non-vegetarians.  I’m simply sharing part of my story and how I eat & why because
