Good morning!  Hope you are all well on this Thursday morning.

Wow, did I just have a delicious breakfast!!  Yesterday after work I stopped at World Market quick because I needed to pick up another jar of Peanut Butter & Co’s Cinnamon Raisin Swirl PB and I came across this on sale:

New Hope Mills Banana Caramel Pancake Mix

Well, I was intrigued… bananas & caramel?  Mmm, sounds like it would go fabulously with one of my favorite things – peanut butter!  So of course I had to buy it!

I whipped up one serving of the pancake mix (1/3c) and mixed it with about 4tbsp of water (they say to add oil or butter, but I skipped that) and cooked it on my griddle with some non-stick spray.  I made one large pancake out of it and topped it with a tbsp of Peanut Butter & Co’s White Chocolate Wonderful PB & a bit of sugar free maple syrup.  I also added a side of scrambled veggie Egg Beaters & some reduced sugar ketchup.

Nice’n fluffy banana caramel pancake… Mmm….
